Broccoli Pasta

This is a typical lunch for me. Adding vegetables to a typically unhealthy food like pasta, sort of makes up for it, and I think everything tastes better with seasoning. Also I just love broccoli. It’s one of the only vegetables I can tolerate by itself. You can use any brand of pasta that you want, and there are definitely gluten-free options!


Allergens: Wheat, Gluten

Ingredients

  • 1 ½ cup of any brand of pasta

    • I use the Barilla tri-color rotini and Trader Joes Vegetable Radiatore but you can use whatever pasta you want. I think little kids love different colors and shapes, so that might make them more inclined to eat food with vegetables :)

    • Gluten-free options available! This pasta example just happens to have gluten.

  • 4 cups of water

  • ½ tsp of salt

  • 1 tsp of olive oil

  • ½ tsp chopped garlic

  • 1 cup broccoli

  • 1 tsp Italian dressing*

  • 1 tbsp Guacamole Salsa *

  • Optional: black pepper

  • *The dressing and salsa are optional, and just for taste.


Preparation

  1. Fill a pot with the 4 cups of water and place on the stove.

  2. Add the oil, chopped garlic, and broccoli into the pot.

  3. Sautee the broccoli in the pot

  4. Let the water boil

  5. Once the water is boiling, add the pasta to the pot

  6. Add the Italian dressing , Guacamole Salsa, salt, and pepper to the pot

  7. Stir and mix together

  8. Now let it sit and cook for 10-12 minutes

  9. Once it is done cooking, drain the liquid out. I would recommend using a strainer.

  10. Once all the liquid is drained out, pour the broccoli pasta into a bowl

  11. Enjoy!
